BRIEF
HISTORY OF WHOLE FOOD NUTRITION
DR. WESTON PRICE In the early 1900's,
Dr. Weston Price, a dentist, performed extensive research
on primitive natives during his travels around the world.
He found to his amazement that these people, cut off from
civilization, demonstrated no signs whatsoever of degenerative
and auto-immune conditions like arthritis, diabetes, dental
cavities, cancer, heart problems, and osteoporosis. In fact,
Dr. Price discovered that these people were extremely healthy,
so he paid particular attention to their eating habits. He
noticed not only that they ate a wide variety of herbs and
vegetables, but that they regularly consumed large amounts
of animal flesh.
When these cultures
ate an animal, they ate the whole thing, including the fat,
organs and glands. They even boiled the bones in their soup
to get out all of the fat-soluble vitamins that are found
in the marrow. They prized the fatty, marbelized meats over
the leaner meats and consumed eggs, milk, and dairy products.
In all traditional cultures, some animal products are eaten
raw. Primitive diets have a high food enzyme content from
raw dairy products, raw meat, raw fish, and raw honey. Tropical
fruits,, wine, unpasteurized beer, fermented vegetables, seeds,
grains, sprouts, beans, and cold-pressed oils from fish, olives,
flax, and coconuts were commonly consumed. All traditional
diets contained some salt and made use of animal bones. These
nourished and healthy people ate diets very high in fat and
oils including butter, lard, chicken fat, goose fat, duck
fat, coconut oil, palm oil, and sesame oil.
The diets of healthy,
non-industrialized peoples contain at least four times the
calcium and other minerals and ten times the fat-soluble vitamins
found in animal fats as the modern day American diet. Of course,
their diets contained no denatured foods such as refined sugar,
corn syrup, white flour, canned foods, hydrogenated vegetable
oils, artificial vitamins, additives, preservatives, colorings,
and no pasteurized, homogenized, skim, or low-fat milk.
Dr. Price monitored
these people for several decades and proved that degenerative
diseases and poor health started to take hold on these once
healthy people within one generation of eating modern, industrialized
food. As of the year 2005, most Americans are already third
and fourth generations of consumers of processed food. With
each passing generation, the health of the general population
continues to further decline in a downward spiral. Imagine
what is in store for future generations if we blindly stay on our current path.
DR. ROYAL LEE Dr. Royal Lee, another dentist, founded Standard Process in 1929. Raised on a farm near Dodgeville, Wisconsin, his interest in science and nutrition began early at the local elementary school. At age 12, he compiled a notebook of definitions on biochemistry and nutrition, and he began collecting books on these subjects. What started as a hobby continued throughout his lifetime to eventually become part of the Dr. Royal Lee Memorial Library.
Dr. Lee graduated in 1924 from Marquette University Dental School in Wisconsin. While attending the university, the importance of nutrition became a major interest of his. A paper he prepared in 1923 outlined the relationship of vitamin deficiency to tooth decay and showed the necessity of vitamins in the diet. His research led to the development of CATALYN®, a vitamin concentrate derived from natural sources. Introduced in 1929, CATALYN became the nucleus of a complete line of nutritional supplements at the Vitamin Products Company.
Dr. Lee believed the key to maintaining the quality of nutritional supplements was a unique manufacturing process. He designed high-vacuum, low-temperature drying equipment to preserve the maximum nutrients of the whole foods. These technologies continue to be used today.
From a small two-room facility, the Vitamin Products Company has evolved into the present company we call Standard Process Inc. in Palmyra, Wisconsin. Standard Process is still family-owned and operated. The company is continually growing, building on expert research and quality manufacturing first imposed by Dr. Lee.
In addition to his work in the nutrition field, Dr. Lee was the inventor of a wide variety of dental, mechanical, automotive and electrical equipment. He filed over 70 patents for all types of equipment, processes, internal combustion engines and food products.
MODERN DAY MALNUTRITION Statistics undeniably
show that obesity is out of control, and degenerative diseases
are steadily increasing at an alarming rate. Cancer, which
has slowly risen up the ladder over the years from number
25 on the list, has finally toppled heart disease as the number
one killer, and sperm counts in American males have steadily
declined over the past several decades. Basically, we are
slowly poisoning ourselves with fake food and starving ourselves
from eating real food. We are truly a nation that is over
fed, but under nourished. Foolish fads, false claims, and
scare tactics, such as low fat diets, cholesterol myths, and
unnecessary medications have produced side effects of gargantuan
proportion. In a last-ditch and desperate effort, people are
blindly swallowing the flavor-of-the-month synthetic vitamins
like candy, but they are doing more harm than good, seeing
as how they are nothing but more unnatural chemicals that
are made in a laboratory.
THE TRUTH ABOUT SYNTHETIC VITAMINS Synthetic
vitamins are generally unwanted by our bodies, which is why
they usually turn the urine into a glow-in-the-dark, yellow/green
color . The body recognizes these substances as unnatural
and potentially harmful and does everything in it’s
power to eliminate them. The body has to spend it’s
own water, energy, and vitamin reserves to detoxify synthetic
vitamins in the liver and kick them out through the kidneys.
Even though these substances may be mostly water-soluble,
it does not mean that they just automatically float right
on out of the body, with no harm done. No, the body has to
go through great expense to deal with these substances and
uses resources that would be better reserved for other bodily
functions. Most people’s systems are already overwhelmed
with the burden of detoxification and elimination of harmful
substances. Instead of throwing more fuel on the fire, we
should release the body from chemical insults, periodically
detoxify the liver, and allow the organs of digestion to get
a rest. We also need to feed the cells and organs with natural,
healthy foods and supplement our diets only with organically-grown
whole food concentrates.
